Tomato Cucumber Salad
This is a perfect salad in summer when farmers markets are filled with the colorful fresh fruits and vegetables, juicy tomatoes and crunchy cucumbers. It’s a simple salad from Georgia, but if you pick the ingredients when they are in season, they are excellent.
ingredients
- - 2 large heirloom tomatoes, sliced
- - 3-4 small cucumbers, peeled and sliced
- - ½ red onion, thinly sliced
- - ½ chili pepper (such as jalapeño or serrano), thinly sliced (adjust to taste)
- - 1/4 cup fresh parsley, chopped
- - 2 tablespoons extra virgin olive oil
- - 1 tablespoon red wine vinegar or lemon juice
- - Salt and pepper, to taste
directions
- 1. Wash and slice the tomatoes and cucumbers. Thinly slice the red onion and chili. Chop the fresh parsley.
- 2.In a large mixing bowl, combine the tomatoes, cucumbers, red onion, chili, and chopped parsley.
- 3. Drizzle the extra virgin olive oil and red wine vinegar (or lemon juice) over the salad ingredients. Season with salt and pepper according to your taste.
- 4. Using salad tongs or a large spoon, gently toss all the ingredients together until evenly combined and coated with the dressing.
