Crispy Fried Egg Rolls

ingredients
- - 8 egg roll wrappers
- - 1 cup shredded cabbage
- - 1/2 pound ground chicken
- - 1 cup oyster mushrooms, chopped
- - 1/4 cup fresh cilantro, chopped
- - 1 tablespoon fresh ginger, minced
- - 2 tablespoons soy sauce
- - 1 tablespoon vegetable oil for filling, more for frying the egg rolls
- - Salt and pepper to taste
Prepare the Filling
- 1. In a large skillet, heat a tablespoon of vegetable oil over medium heat.
- 2. Add the ground chicken to the skillet and cook until browned and no longer pink, breaking it up with a spatula as it cooks.
- 3. Add the chopped oyster mushrooms, shredded cabbage, minced ginger, and soy sauce to the skillet. Cook for another 3-4 minutes, until the mushrooms and cabbage are softened.
- 4. Stir in the chopped cilantro and season with salt and pepper to taste. Remove the skillet from heat and let the filling cool slightly.
Assemble the Egg Rolls
- 1. Lay an egg roll wrapper on a clean surface in a diamond shape, with one corner facing you.
- 2. Spoon about 2-3 tablespoons of the filling onto the center of the wrapper.
- 3. Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll tightly to enclose the filling. Moisten the top corner with water and press to seal the egg roll.
