ingredients
- 2 tablespoons olive oil (or your choice of oil)
- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, sliced or chopped
- 1 can (15 oz) white beans (like cannellini or great northern), drained and rinsed
- 4 cups water
- 4-6 cups bok choy, chopped (use both the stems and leaves)
- Salt and pepper, to taste
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime (optional for a tangy finish)
Prepare the Chicken and Vegetables
- Heat olive oil in a large pot over medium heat.
- Add the chicken pieces and cook for about 5-7 minutes, stirring occasionally, until lightly browned and cooked through.
Sauté the Aromatics
- add the diced onion and carrots for 4-5 minutes until the onion becomes translucent and the carrots begin to soften.
- Add the garlic and cook for another minute, until fragrant.
- Pour in the water, scraping any browned bits from the bottom of the pot. Bring to a gentle simmer.
- Stir in the drained beans. Simmer for 10 minutes, allowing the flavors to meld together.
Incorporate the Bok Choy
- Add the chopped bok choy (both stems and leaves) and continue simmering for another 2 minutes until the bok choy is tender but still vibrant.
Final Touches
- Season the soup with salt and pepper to taste.
- Stir in the fresh cilantro and lime juice (if using) just before serving for a burst of freshness.
