These energy balls are perfect for a quick and nutritious snack on the go, providing a boost of energy from the natural sugars in the dates or other dried fruit and the protein and healthy fats from nuts.
ingredients
- - 8-10 pitted dates
- - 1 cup almonds or other nuts
- - ¼ cup goji berries
- - ¼ cup dried apricots
- - 1 tablespoon chia seeds (optional, for extra nutrition)
- - ¼ cup shredded coconut or cocoa powder (optional)
directions
- 1. If your dates are not already pitted, remove the pits.
- 2. Place the dates, almonds, goji berries, dried apricots, and chia seeds, shredded coconut and cocoa powder (if using) in a food processor.
- 3. Blend the ingredients until they are finely chopped and start to stick together. You may need to scrape down the sides of the blender or food processor a few times to ensure everything is well combined.
- 4. Once the mixture is sticky enough to hold together, scoop out small portions and roll them into balls about 1 inch in diameter. If the mixture is too sticky to handle, you can lightly oil your hands to prevent sticking.
- 5. Place the energy balls on a plate or baking sheet lined with parchment paper, and chill them in the refrigerator for at least 30 minutes to firm up.
- 6. Once chilled, your energy balls are ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to two weeks.
