Roasted Zucchini in garlic mayo sauce
This dish is perfect for summer when zucchinis are abundant and can be served alongside grilled meats, fish, or as a flavorful addition to a vegetarian meal.
ingredients
- - 3 medium zucchinis, sliced into rounds or sticks
- - 1/4 cup mayonnaise
- - 1 cup water (to thin the sauce)
- - 2 cloves garlic, grated
- - 1 tsp. Ground coriander
- - 1 tsp. paprika
- - 1 tablespoon (or more) olive oil to roast
- - Salt and pepper, to taste
- - Fresh cilantro, chopped
directions
- 1. Preheat your oven to 400°F (200°C).
- 2. Wash the zucchinis thoroughly and slice them into rounds or sticks, about 1/4 inch thick.
- 3. On a baking dish, drizzle olive oil, sprinkle salt and pepper and place zucchini pieces, flip them around so they are coated with oil, salt, and pepper from both sides. Place in the oven and roast for about 30 minutes until golden brown.
- 4. In a small bowl, combine the mayonnaise,water, grated garlic, coriander, salt, and paprika.
- 5. After the zucchini is roasted, remove from the oven and transfer to a serving dish. Pour mayo sauce over and garnish with freshly chopped cilantro.
- 6. Serve the oven roasted zucchini hot as a side dish or appetizer. The garlic mayo sauce with fresh cilantro adds a wonderful flavor that complements the natural sweetness of the zucchini. It’s great on the second day as well, chilled.
